  2. I haven’t tried it yet, but when I do I think I’ll give it the southwest treatment: put some chunked avocado, tomatoes, and grated cheese on top. Maybe a little cayenne for some kick. Then I’d call it papas de papá. 😉

  3. Southwestern sounds awesome–I *did* put some peppers in Seth’s, but stopped short of committing fully… tomatoes and avocados, too? Yum!
